Mokador South Africa

Mokador South Africa was established in 2007 with the goal of redefining South Africans perception of what constitutes a quality cup of coffee.

With the founders of Mokador South Africa having had the privilege of travelling to many parts of the world where espresso is an institution and its quality is non-negotiable, like Italy and many parts of Europe, and to countries where speciality coffee, and phrases like a “Triple Shot Latte with Room and Wings” is loved and understood by all like the US and Australia, it was clear that South Africans where cruelly not being exposed to the wonderful world of speciality coffee.

With this in mind, the search for a unique, boutique espresso roaster was started. This led us to the land that gave birth to espresso and espresso culture, Italy. In the small town of Faenza, just outside Bologna, which is home to Ferrari, Ducati and many other world renowned Italian companies, we found Mokador Castellari.

One cannot help but fall in love with the Italian way of life, and the passion they have for art, fashion, food, and of course espresso. It truly is a beautiful life!

When one has experienced the Italian culture, there can be no questioning the passion and skill that goes into producing Italian espresso, a passion that is shared by the Mokador family to an even greater extreme, if that is all possible !!

A story of standards

Mokador was established in Faenza in 1967. Its founder, Domenico Castellari, had previously discovered a passion for coffee, which led him to open his first small shop. There he not only roasted the coffee and chose the most precious varieties of beans himself, but also served the customers directly, offering them unique, personal care and attention.

From that moment on, the preference for high quality has always marked the company philosophy, which over forty years of business has now become a major concern with cutting-edge technology and organisation, expertly blended with continuous, traditional care for the product. Mokador has in fact grown at an annual rate of between 7 and 10% and now boasts a production site that covers a total of around 4500m2.

Mokador has made quality part of its company philosophy and for this reason it decided to obtain the ISO9001 certificate for the company and the voluntary one awarded by BVQI (international certifying body) for its original GMM bar blend and Top Quality pod products. This certification is aimed at formalising Mokador’s commitment to its customers and responding to the growing consumer demand for high quality products. The inspections and regular checks carried out by BVQI bear witness to the strict guidelines that Mokador follows in order to guarantee product specifications aimed at maintaining constantly top quality coffee.

  • Separate roasting, the individual coffee varieties are roasted separately to enhance their organoleptic characteristics
  • Air cooling, immediately after roasting, aromas are fixed in the beans through a natural forced air ventilation system
  • Controlled ageing, the coffee, once it has been roasted and cooled, is left to rest for a period of 20 days in special silos and only afterwards, when the flavour is at its richest, is it packaged ready for consumption
  • Sensory profile, the Mokador aroma and flavour are controlled and guaranteed over time

In this way Mokador offers its customers the chance to carve out a niche in the market by making the most of their professionalism and to create customer loyalty by offering a quality product that is guaranteed and controlled over time.

Sources and origins

The ideal habitat for the coffee plant is in a tropical area with a warm, humid climate. The fine, delicate Arabica variety in particular must be grown at least 900 metres above sea level and requires special care and attention. It has a soft, sweet, velvety and creamy taste, unlike the more resistant and less expensive Robusta variety, which has a distinctive but less refined taste and can be grown at just 200 metres.

Mokador imports mainly Arabica beans from selected producers in Central America, where every single bean is subject to strict controls. In fact complex optical-electronic systems are able to discard irregular beans, so only the very best are picked and the yield is sorted to perfection. They are then shipped to Italy while still green and are marked “superior quality”, ready to enter the Mokador site for the truly unique roasting process.
So only selected, carefully blended coffee goes into the exclusive Mokador blends.

A precise production process

Mokador’s production strategies reflect its philosophy, always aimed at safeguarding quality. So it has purposefully chosen to maintain control methods that favour manual steps alongside mechanical ones, to guarantee that the coffee is processed in a traditional way and uniquely “certified” by personal experience.

Mokador embraces innovation but never forgets that making good coffee is an art. This judicious combination has enabled it to become a leading manufacturer of top quality coffee.
